8 eggs, 250 g sugar, 4 tablespoons flour, 3 tablespoons butter, 2 oranges zest and juice.
This dessert, sweet and sour at the same time, with a creamy and smooth texture that almost melts in the mouth, is a convent sweet that quickly spread throughout the country. The secret of this sweet is even the fruit, and must be made with the sweet taste of the oranges of the Algarve.
To prepare, start by pouring the flour into a bowl and add the eggs by stirring well with a wand. Melt the butter in a water bath. Add the sugar, the melted butter, the zest and the juice of the oranges, mixing everything very well. Bring the baked to 200ºC in a tray greased with butter and lined with parchment paper. Remove the pie from a cloth dusted with sugar and roll it up. Serve your pie wet and chilled orange garnished with orange slices.
