1 kg dry fig, 125 g yellow sugar, 2.5 g fennel, 25 g chocolate powder, 250 g almond, cinnamon q.s., lemon zest q.b., brandy q.s.
The stuffed figs are an irresistible appetizer filled with a sweet mixture of almond, chocolate and sugar that complements well with the sweet and sour sweetness of a dried fig.
Start by grinding / chopping the almonds, add the sugar, chocolate, cinnamon, fennel, lemon zest and a little brandy and mix well. Take the dried figs, pull the foot to be stretched and with a sharp knife, give a vertical stroke, fill the figs through the opening, then close the figs to disguise the cut. Bake in a tray with parchment paper just to toast the outside a little. Serve cold, traditionally wrapped in white fringed paper.
