2 kg boar, cut into pieces, 6 onions, 1 garlic, 1 red pepper, coriander branch, parsley branch, 1 beer,
6 cloves of garlic, 2 bay leaves, coarse salt to taste, 1 dl of olive oil, q.b. of water, (container with water and slices of 2 lemons).
Before making the boar take into account that its confection is delayed because the meat is a little hard, dry and sweet,
and that it is convenient to prepare the meat from one day to the next. Leave in a bowl of water with a few slices of lemon,
so that the flesh loses some of the blood and becomes softer. Remove the meat from the water and rinse it under running water (drain it well in a filter holder and set aside). In a pan sauté onions, red pepper, garlic and leek in olive oil. Add the meat, bay leaf, parsley, coriander, beer, and stir well. Then add the water and simmer for about 2/3 hours, depending on the stiffness of the meat.After cooking, rectify the seasoning if necessary, and let it set to flavor and serve with boiled or fried potatoes, to your liking.
