Ingredients: 2 kg of lamb (leg and breast), 4 cloves garlic, 2 bay leaves, 1 dl olive oil, 1 dl vinegar (to taste), 2 tablespoons of lard, 1 glass of white wine, 1 onion (optional), black pepper, sliced durum wheat bread,
mint to decorate, salt to taste.
Preparation:
Cut the lamb into pieces. Fry the chopped garlic with the bay leaf in the fats (you can also add a cut onion to the thin slices). Add the meat, season with salt and pepper and fry until golden brown the meat. Add white wine and vinegar and cover. When the broth is evaporated add hot water and let it cook on a low heat, stirring if necessary. Meanwhile cut slices of hard bread and fry in olive oil. Place the slices on a plate and lay the lamb dressing on top. Add mint to decorate.
