Preparation: Eels are one of the most sought-after river fish, made in various forms, their offer is more abundant and widespread throughout the year. To make this recipe, wash the eels very well until the white slime that they usually have, wipe with kitchen paper and season with salt to taste and a few drops of lemon. Remove the head and guts and cut the eel into small slices. Beat in flour and fry in very hot oil. Accompany with coriander or tomato rice, according to preference.
